10 minute "Zoodles" 

(Zucchini Noodles)

Spiralizers to the rescue.

I know. "Zoodles" sounds like it comes from a children's book, but it's a real word. "Zoodles" is the trendy, abbreviated term for "zucchini noodles". They have become so popular that some restaurant chains have started offering them as an alternative to gluten-containing pasta, or as a menu substitution for their customers. I personally think it is a move in the right direction.

"Zoodles" are my go-to noodle substitute, but if you want something that is more in season right now (winter), try noodle-izing carrots, potatoes, or winter squashes such as butternut squash.

RECIPE: 10 minute "Zoodles" (Zucchini Noodles)

INGREDIENTS

  • 1 zucchini 

  • 1/4 tsp salt 

  • 1/4 tsp onion powder

  • 1/2 Tablespoon olive oil 

​

 

  1. Wash zucchini and dry with paper towel. 

  2. Heat olive oil in a pan over medium heat

  3. While the oil is heating on the stove, use a spiralizer, like the one I have linked below (1), to turn the zucchini into noodle form. Make sure to follow safety instructions because most contain small blades similar to a cheese grater and can be a safety hazard during improper use. A peeler or a grater can also work if you're in a pinch, however I find that a spiralizer produces the best and most consistent results. I also find it best to "catch" the noodles in a medium size bowl. 

  4. Once the stove has reached the proper heat, toss the "zoodles" into the oil in the pan and allow them to cook for 1-2 minutes to soften them. 

  5. Add seasonings (salt and onion powder) to the "zoodles" and continue to turn them as needed using a spatula or similar utensil to ensure that they don't burn. 

  6. Between 5-6 minutes, your "zoodles" should be cooked to perfection! Test them just as you would noodles (take one out, allow it to cool, and taste it to test consistency, flavor etc.). "Zoodles"  aren't an exact science, so experiment with the timing and seasonings until you find something you like. 

  7. Add your choice of meat or seafood to the cooked "zoodles" as well as a vegetable based sauce or nut based cheese alternative, and voila! You've got yourself a delicious dish.

Zucchini

Zucchini is very obviously the star player in this recipe, if you couldn't tell. It contains vitamin C, which can help contribute to keeping our immune systems up and running, or in other words, it helps our body be protected from germs and stay healthy. It is extremely versatile, making it increasingly popular. Fun fact, it's actually a fruit botanically but is more often categorized as a vegetable due to the methods of preparation (it is more commonly cooked how we are used to preparing and cooking similar vegetables) (2). â€‹
